BThefirstWesterncookbookappearedjustover1,600yearsago.Derecoquinara(itmeans´concerningcookery´)isattributedtoaRomangourmetnamedApicius.ItisprobablyacompilationofRomanandGreekrecipes,someorallofthemdrawnfrommanuscriptsthatwerelaterlost.Theeditorwassloppy,allowingseveralduplicatedrecipestosneakin.YetApicius´sbooksetthetoneofcookeryadviceinEuropeformorethanathousandyears.Asacookbookitisunsatisfactorywithverybasicinstructions.JosephVehling,achefwhotranslatedApiciusinthe1930s,suggestedtheauthorhadbeenobscureonpurpose,incasehissecretsleakedout.
CButamorelikelyreasonisthatApicius´srecipeswerewrittenbyandforprofessionalcooks,whocouldfollowtheirshorthand.Thissituationcontinuedforhundredsofyears.Therewasnoordertocookbooks:
acakerecipemightbefollowedbyamuttonone.Butthen,theywerenotwrittenforcarefulstudy.Beforethe19thcenturyfeweducatedpeoplecookedforthemselves.Thewealthiestemployedliteratechefs;otherspresumablyreadrecipestotheirservants.Suchcookswouldhavebeencapableofcreatingdishesfromthevaguestofinstructions.
DTheinventionofprintingmighthavebeenexpectedtoleadtogreaterclaritybutatfirstthereversewastrue.Aswordsacquiredcommercialvalue,plagiarismexploded.Recipesweredistortedthroughreproduction.ArecipeforboiledcaponinTheGoodHuswivesJewell,printedin1596,advisedthecooktoaddthreeorfourdates.By1653,whentherecipewasgivenbyadifferentauthorinABookofFruits&Flowers,thecookwastoldtosetthedishasideforthreeorfourdays.
EThedominantthemein16thand17thcenturycookbookswasorder.Bookscombinedrecipesandhouseholdadvice,ontheassumptionthatawell-madedish,awell-orderedlarderandwell-disciplinedchildrenwereequallyimportant.Cookbooksthusbecameasymbolofdependabilityinchaotictimes.TheyhardlyseemtohavebeenaffectedbytheEnglishcivilwarortherevolutionsinAmericaandFrance.
FInthe1850sIsabellaBeetonpublishedTheBookofHouseholdManagement.Likeearliercookerywriterssheplagiarisedfreely,liftingnotjustrecipesbutphilosophicalobservationsfromotherbooks.IfBeeton´srecipeswerenotwhollynew,though,thewayinwhichshepresentedthemcertainlywas.Sheexplainswhenthechiefingredientsaremostlikelytobeinseason,howlongthedishwilltaketoprepareandevenhowmuchitislikelytocost.Beeton´srecipeswerewellsuitedtohertimes.Twocenturiesearlier,anunderstandingofruralwayshadbeensowidespreadthatonewritercouldadvisecookstoheatwateruntilitwasalittlehotterthanmilkcomesfromacow.Bythe1850sBritainwasindustrialising.Thegrowingurbanmiddleclassneededdetails,andBeetonprovidedtheminfull.
GInFrance,cookbookswerefastbecomingevenmoresystematic.ComparedwithBritain,Francehadproducedfewbookswrittenfortheordinaryhouseholderbytheendofthe19thcentury.ThemostcelebratedFrenchcookbookswerewrittenbysuperstarchefswhohadaclearsenseofcodifyingaunifiedapproachtosophisticatedFrenchcooking.The5,000recipesinAugusteEscoffier´sLeGuideCulinaire(TheCulinaryGuide),publishedin1902,mightaswellhavebeenwritteninstone,giventhebook´sreputationamongFrenchchefs,manyofwhomstillconsideritthedefinitivereferencebook.
HWhatEscoffierdidforFrenchcooking,FannieFarmerdidforAmericanhomecooking.ShenotonlysynthesisedAmericancuisine;sheelevatedittothestatusofscience.´Progressincivilisationhasbeenaccompaniedbyprogressincookery,´shebreezilyannouncedinTheBostonCooking-SchoolCookBook,beforelaunchingintoacollectionofrecipesthatsometimesresemblesabookofchemistryexperiments.Shewasoccasionallyover-fussy.SheexplainedthatcurrantsshouldbepickedbetweenJune28t
