Fromancienttimesuntiltoday,thebasicprocessofproducingtheoilisthesame.First,wholeolivesarepressedhardintopieces.Then,theliquidisseparatedfromthesolids.Afterthat,thevaluableoilisseparatedfromthewater.

Manyolivegrowersmaketheirancienttraditionscontinueandstillharvesttheolivesbyhand.“Weharvestinthetraditionalway,”saysDonCelso,anolivefarmerfromTuscany,Italy.“Itwouldbelessexpensivetodoitwithmachines,butit’smoreasocialthing.Twentypeoplecometohelpwiththeharvest,andwepaytheminoil.”
