Saccharin(糖精)istheonlytrulyman-madesweetener.Itwasdiscoveredbyaccident100yearsagoinan
experimentwithcoaltar(煤焦油).Intheexperiment,ascientistgotsomesubstance(whichlaterheknewwas
saccharin)onhisfinger.“Later,atdinner,heputhisfingerintohismouthandnoticedthesweettaste,”saysEric
Walters,professorofbiochemistryattheChicagoMedicalSchool.
Containingnocalories,saccharinisnotabsorbedbythehumanbody.Itbegantobedislikedbypeopleduring
thelate1970sandearly1980swhenonesetofstudiesshowedthatitcausedcancerinlaboratoryanimals.According
toWalters,itisnotfairtosaccharinbecausethestudieswerenotperfect.
Morerecenttestingwithotheranimalswithsmallamountsofsaccharinhasnotrepeatedthesameresults.Even
withtheseexperimentalresults,saccharinlabelsarestillrequiredtocarryawarningsayingithasbeenshowntocause
cancerinlaboratoryanimals.In1990,saccharinwasallowedtobesoldinthemarketagain.
Becauseitishundredsoftimessweeterthantablesugar,onlyasmallamountofsaccharinisusedathome,in
restaurantsorinthefood-makingindustry.
Anothersweetenerwecommonlyuseisaspartame(甜味剂).Itisnotsosweetassaccharin,butmuchsweeter
thantablesugar.Unlikesaccharin,however,aspartamecanbeabsorbedintothebody.Itcontains4caloriespergram,
thesameastablesugar.Butaspartameis180timessweeterthansugar.
Althoughaspartameisfoundinthousandsofproducts,itssafety,likesaccharin,hasstillbeenuncertain.
Nevertheless,peopleallowitsuseinallfoodsanddrinks.
“Inmyopinion,aspartameisassafeassugar—butthentherearethosewhothinkwhitesugarisdangerous,”
saysWalters.“Betweenaspartameandsaccharin,Iwouldpickaspartame.Butatnormaluselevels,Ithinksaccharin
