洗净蟹后,置入盛满滚水的锅内,加大姜一块,猛火煮之。

一般半斤以上的二十分钟,六两以下的十五分钟。

2、蒸蟹法:

水烧至大滚时,将蟹肚朝天放入蒸笼中,上置洗净抹干之紫苏叶,蒸十五到二十分钟。

【蘸料】用一碗半醋,三碗半酱油,六匙砂糖,姜四节剁茸隔水炖二十分钟即可。
