一、摘要

近年来,健康越来越受到人们重视,养生套餐以食材调配的养生方式在我国随之不断发展。

在我国,打开互联网走进超市便利店到处都是食品,同时食品安全问题牵扯到每一个人的心,尤其是三高人群,高学历、高收入、高素质人群,全是对养生健康的市场需求,有助于在全社会的推广。

二、公司简介

随着人们物质生活水平地不断提高,吃饱、吃好已经不能满足现代人吃的要求,如何才能吃得健康越来越受到人们的重视。

当今社会的饮食安全问题频发不断,各种关于饮食产生的疾病也屡见不鲜,禽流感、疯牛病、口蹄疫、非典等重大流行病疫的发生,使得人们深入了回归自然、回归健康的饮食观念,素食餐厅也就应运而生。

“家简诚厨”素食自助餐厅是响应时代潮流,以提供健康养生的素食为主题的一家时尚、环保自助特色餐厅。

本餐厅位于福州市大学城福建师范大学西门外,对广大学生和周边居民提供素食产品及饮料自助,以养生保健为基础,遵从回归自然,回归健康,返璞归真的文化潮流,推广素食健康文化,倡导安全、放心的健康饮食习惯。

餐厅本着服务顾客,以为广大素食者提供健康实惠饮食为宗旨,致力打造一家环境优雅,健康卫生,服务贴心的自助餐厅,让广大顾客在安全舒心的环境中享受素食,和“家简诚厨”素食自助餐厅一起享受健康、安全、美好的人生。

 

三、产品与服务

(一)概况

“乐活”127食养坊自助餐厅将成为一个多项服务于一身的餐饮中心,供应时间为每天11:

00,提供以下的产品和服务:

1、向顾客提供各种地中海餐品自助

本餐厅提供各类素食餐品,并以自助的消费形式面向顾客群体,通过对不同菜系的研究搭配,使广大素食者体验到超实惠的健康食品。

2、提供网络团购服务

本餐厅与网络团购机构合作,通过网络吸引更多的消费者,并以团购的形式给予顾客群体更多的优惠。

3、为顾客提供保健饮食咨询

本餐厅立足于素食领域的健康饮食习惯的推广,并为顾客提供保健饮食咨询,在提供产品服务的同时,宣传关于养生的健康饮食文化,食补及药补,让顾客在享受美食的同时对饮食健康有更多的了解。

4、定期向顾客群体赠送养生文化手册

本餐厅会定期(每周或者每月等)向顾客群体赠送养生文化手册,以传单或者杂志的形式发放给所有的顾客群体(包括不在店内消费的群体),为宣传养生文化作些微薄之力。

5、不定期举办关于健康饮食主题的活动

本餐厅会不定期地与社区和团体协会合作,举办关于健康饮食主题的活动,例如免费品尝美食、素食烹饪比赛、素食菜谱图展等,以加深人们对健康饮食文化的认识,同时拉近本餐厅与群体的距离,增加亲民度,为本餐厅的形象打下良好基础。

6、定期回馈顾客

本餐厅会定期举行回馈顾客的活动,比如发放优惠券、消费减价、抽奖消费等,增加顾客满意度与重复消费。

(二)店面装潢

本餐厅及产品具有简约大方、清新自然的文化气息,这将成为企业的隐性资产,增加餐品的附加值。

本餐厅的装修将以米白色及暖黄色为基色调,在此基础上追求时尚环保。

1、餐厅天花板和墙面的设计。

餐厅的顶部使用的是白色吊顶,这样既美观而又十分亲切,而且素雅洁净。

墙壁以橘色和暖黄色为主题,在墙面齐腰的位置以下为橘色,以上为暖黄色,在齐腰的位置安装一些比较耐磨的木饰品,这样不仅能营造一种清新,幽雅的气氛,还能增加就是者的食欲。

墙壁上除了挂置一些可爱的卡通蔬果画之外,墙壁上一些地方要放置一些小木架,上面放些小盆栽或者植物工厂。

另外还可以设置“七嘴八舌留言板”,供客人记录自己的心情。

2、餐厅的地砖选择设计。

餐厅是一个容易脏的地方,特别是一些油污等,很难清洁,所以餐厅的地砖选用表面光洁,易于清洁的白色瓷砖。

3、餐桌的选择。

不同形状的餐桌有不同的寓意,也能给人带来不同的感受。

选择了方形四人餐桌摆放于餐厅中,此外,还有单人的吧台桌贴墙面放,很好地利用了剩余的空间,还有包厢私人订制服务。

4、餐厅的灯具安装。

灯具采用暖黄色灯,造型简单,不用太繁琐,简单明亮就好。

5、背景音乐的选择。

在装修的时候可以选择一个地方专门设计一个音箱的位置,吃饭的时候放放轻音乐是一件很美妙的事情。

6、餐厅门口。

餐厅门口除了放置赏心悦目的绿色植物之外,还设立特色广告小板,以卡通有趣的形式展示当天餐厅供应的特色菜或优惠活动,从而吸引学生前来就餐。

7、餐台设置。

餐台位于餐厅的中央位置,餐台上除了摆放菜品之外,还有饮料机和餐具。

8、餐厅内设有男、女洗手间各一,以明净为主。

(三)食品种类

食材要吃出健康关键在于合理的搭配。

各国营养学家也声明说,搭配合理的素食是健康的,可以提供充足的营养素。

涉及的食材有蔬菜类、谷类、水果类、淀粉类、乳类、菌藻类、坚果种子类、豆类、鱼类等。

根据素食的营养搭配方式,本素食自助餐厅提供以下几类品种:

1、主食类

①米饭、面类、粉类等。

主要是让顾客在用餐之后能够切实填饱肚子。

比如白米饭、炒饭、炒(煮)面、炒(煮)粉等等。

②粥类。

当前在外就餐,想用粥的话,是相当麻烦的,或者无处可买,或者代价比较高,相对米饭、面饭来说,粥一方面可以解渴,另一方面入口也较其他品种更为适宜,也就是进食的舒适度比较高,此外,粥的种类很多,营养价值也很出色,利用各种原料煮出来的混合粥,在美味上也可以有很出色的表现。

③特色米饭、面饭。

这方面也大有可为,比如红薯米饭,南瓜米饭,萝卜米饭,都十分的美味,成本低廉,即便比较低的售价也十分的可观。

④馒头包子类。

这类食品受限于人员、场地、存放条件等多种因素,如果可以自己制作自然是没有问题,如果不成,可以考虑与这方面店铺进行合作,或者出于安全
