Thebiggestnameinthisweek'seditionisSanAntoniostapleLaFondaonMain.Tomakeourweeklywalkofshame,arestaurantmusthaveatleast14demerits,andLaFondaearnedenoughtograbaplacerightinthemiddleofthelineup.

Butatleasttheydidn'thaveanymoldontheirreport,whichwasonfourrestaurantinspections—includingtheicebinforaJackintheBoxdrive-thruwindow.

FULLDISCLOSURE:

I'maddictedtoheat.Ilovehotandspicyfood,andsincemybrothermovedtoMarinadelRey,Calif.,lastyear,whenIvisit,wenevermissthechancetoeatinMontereyPark,acrazy-goodconcentrationofSichuanrestaurants10milestotheeastthatout-ChinatownsdowntownL.A.

So,thesensethatmymouthisvibratingwhileI'meatingmasterchefChunChu'svegetarianmapotofu($12.95)ismostwelcome.It'sthegroundSichuanpeppercornsthatdoit,adustingofspiceinthefruityheatofthechilisaucethatinfusescubesofcreamytofuwithasymphonyofflavor.

Thiskindofauthenticityisnotsomethingyou'dexpecttofindinaformersteakhousetuckedawayinashoppingcenterinMountLaurel.OpenedbySheriChuinApril2014,CHUliciousspotlightstheconsiderableculinarytalentsofherfather,thechefbehindthewell-regardedFourRiversinPhiladelphia'sChinatown.

ChefChu,anativeofTaiwanwhotrainedunderSichuanchefs,ranFourRiverswithhiswife,Su,for17yearsuntilhesolditinMarchoflastyear.Buthisdaughter,agraduateofLenapeHighSchoolwhostudiedhotelmanagementatPennStateUniversity,didn'tletherfatherrelaxforlong.Whichisexactlywhyhard-to-findTaiwaneseandSichuanregionalspecialtiesaredishedoutatthisunassumingstripmallinBurlingtonCounty.

Twoofourstarterswererave-worthy.Thecrystalwontons($5.95)deliveredaheftyservingofgossamerchickendumplings,piledoverapuddleofearthychilisauceshotthroughwithgarlickysweetblacksoyandtoppedwithchoppedgreenonion.Wealsolovedthecoolcrispnessofslicedcucumbers($5.95),anampleportionofveggiesdrizzledwiththerightcombinationofchiliandsesameoil.

Twomoretraditionalappetizersfellshort.Thescallionpancake($3.50)wouldhavemadeanexcellentdoorstop,leadenanddense,lackingthecrispnessofthepopularChinesestreetfood.Theduoofvegetablespringrolls($3.50)werejustmeh,anonevent,withflavorsolacklusterthattheymayaswellcomefromthefreezersectionatCostco.

NotsowiththeGeneralTso'schicken($14.95),atypicalChineserestaurantdishthatisanythingbuttypicalatCHUlicious,whereitisfresh-friedandcrisp,coatedwithawell-roundedsauceoforangeandchilies,punctuatedbythesnapofpeanutsandfreshcilantro.

ButitwastheCHUliciouschicken($16.95)thatbroughtdownthehouse.ThecolddishisactuallymadewithCornishhensthatarepoachedinfreshbroth,deliveringafall-off-theboneflavorthatworksgorgeouslywithChu'shousemadechilioilandsesamepaste.

Ifyou'renotaheatfanatic,nottoworry.Themenuatthisfamily-ownedspotislargeandvaried,andincludesaccessiblecategoriessuchasnoodlesandfriedrice,vegetableandtofudishes,andCHUliciousspecialties.There'salittlechilipepperindicatinglevelofspice,soordermindfully.

Thewu-shiribs($16.95)areanexampleofadishthat'smainstreamwithoutbeingho-hum.Large,meatyribsaremarinatedinthechef'ssecretblendofimportedspicesandthensteamedtodeliciousnessinasaucebothsweetandsavory.Otherinterestingselections,whichcomeclearlymarkedwiththespicypepper,arecuminlamb($23.95)andhunancrispyfish(marketprice)and,ofcourse,theDanDannoodles($7.95),aSichuanstaplemadewithpreservedvegetables,chilioil,mincedporkandplentyofSichuanpepper.Whilethesaucewasenoughtogetourlipsbuzzing,thenoodlesweredisappointinglyovercooked.

AnotherSichuanfavorite,mapotofu($12.95)wasspot-on,withsoftcubesofsilkentofutreatedwithtastybitsofscallionandtongue-numbingchili-fueledsauce.

Nomatterthatdessertwasn'tonthemenu,ourtastebudswerebuzzingwithsavorySichuangoodness,flavorsauthenticenoughtobeasurprisingdiscoveryinanyChinatown,nevermindanout-of-the-waystripmallinMountLaurel.
