Forconvenience,wemayusecultureasadividerinrelatingfoodvariables’hierarchically.Iamusingthewordculturehereinaclassificatorysenseimplyingthepatternorstyleofbehaviorofagroupofpeoplewhoshareit.Foodhabitsmaybeusedasanimportant,orevendetermining,criterioninthisconnection.Peoplewhohavethesameculturesharethesamefoodhabits,thatis,theysharethesameassemblageoffoodvariables.Peoplesofdifferentculturessharedifferentassemblagesoffoodvariables.Wemightsaythatdifferentcultureshavedifferentfoodchoices.(Thewordchoicesisusedherenotnecessarilyinanactivesense,grantingthepossibilitythatsomechoicescouldbeimposedratherthanselected.)Whythesechoices?

Withinthesameculture,thefoodhabitsarenotatallnecessarilyhomogeneous.Infact,asaruletheyarenot.Withinthesamegeneralfoodstyle,therearedifferentmanifestationsoffoodvariablesofasmallerrange,fordifferentsocialsituations.Peopleofdifferentsocialclassesoroccupationseatdifferently.Peopleonfestiveoccasions,inmourning,oronadailyroutineeatagaindifferently.Differentreligioussectshavedifferenteatingcodes.Menandwomen,invariousstagesoftheirlives,eatdifferently.Differentindividualshavedifferenttastes.Someofthesedifferencesareonesofpreference,butothersmaybedownrightprescribed.Identifyingthesedifferences,explainingthem,andrelatingthemtootherfacetsofsociallifeareagainamongthetasksofaseriousscholaroffood.
