ThecateringindustryinChinaasthetertiaryindustryisatraditionalserviceindustries,experiencedreformingandopeningstarts,quantitativeexpansion,scalechaindevelopmentandbrandpromotionstrategyof4phase,mademakeaspurtofprogressinthedevelopmentof.

Atpresent,thecountryhas4millionscateringoutlets.2005/2006annualChinesetop100cateringenterpriseswithtotalassetsofaboutthirty-twobillionyuan,totalprofitofaboutsixbillionyuan,employeesabouteighthundredthousandpeople,respectively,overthesameperiodlastyearincreased40.38%,28.84%and33.33%higherthanthatofthewholesociety,thecateringindustryaveragegrowthlevel.

China'sreformandopeninguphasgonethroughupsanddownsinthe30year,inthe30yearsofreformingandopeningofChina'scateringindustryalongwiththetideofreformhasundergonethreeleaptypedevelopment.Inthepast30years,ChinahasexperiencedfromfastfoodrestaurantsgrabsbeachChinamarkettoSARSimpact,thentofoodsafety(tonyredevent,appleevents),Chinesefoodandbeverageindustryintheimpact,achievesalesgrowth.

Chinapopulationcardinalnumberislarge,demandisexuberant,cateringmarketdevelopmentcannotmeettheneedsofthemarketunderthebackgroundoftheimplementation,andtoday,thefoodmarketisveryprosperous,thebasicbalanceofsupplyanddemand,intheglobaleconomiccrisisunderthebackgroundofthecateringindustrytoachievenewgrowth?

About2008JulytoAugust,ChinaChainManagementAssociationDDTHuaaccountingfirmcommontoChinesechaincateringindustrydevelopmenttrendresearch,interviewedincludingQuanjude,Xibe,QiaoJiangnan,Zhuang,LittleSwan,smallfatsheep,KFC,Yoshinoya,immortaltraceforestindustriessuchastherepresentativeofthechairmanorgeneralmanager.Inductiveappearstagedomesticchaincateringindustrydevelopment:

first,chaincateringindustrydevelopmentstillmaintainhighspeed.Surveyofcateringenterprisesthedevelopmentofchainoperationmodetotheoutletsandstoresthemajority,accountedfor75%;theenterpriseunderinvestigation,atotalofmorethan500chainstores,salesofmorethan1morethan10billionyuanonlyKFCstores,in2007toreach2400,salesoftwenty-fivebilliononehundredmillionyuan,muchmorethantheothercateringenterprises.Fromtheinvestigationanalysisofchainstores,in100thefollowing(66%),salesofonebillionyuan(80%)forthemajorityofthebusinessscale.Fromsalesgrowthratioanalysis,95%enterpriseshavetwodigitgrowth,whichgrew10%,20%intervalaccountedfor42%,growthof20%-30%interval31%,twointervalgrowthratioistheenterpriseunderinvestigationshowsthatthemajorityofmainstream,enterprisedevelopmentinlinewithbenignoperationrule,canstillmaintainarelativelyhighgrowthrate.

surveyedcompaniesofrawmaterialsin2007growthratebelow10%,52%enterprisesofrawmaterialsincreaserateisamountedto10%,20%,16%ofrawmaterialofenterprisegrowthratereached20%-30%.Thecostofrawmaterialsrisingunderthepremiseoftheenterpriseunderinvestigation,only26%grossmargindeclined5%in47%enterprises,grossmarginisbasicallynotchanged,and16%and11%growthrespectivelytheenterpriseswithin5%and5%above.Thusitcanbeseen,themajorityofenterprisesstillkeepfirminhavelitregrossmargin,thatsurveyedenterpriseschainoperatingprofitpatterncomparisonofhealth,abilitytoresistrisks,intheopensourceefficiencyandminingspace.

Third,humanresources,managementcost,standardizationisdifficulttoconstitutethethreemajorchallenges.Accordingtothesurvey,thecurrentchaincateringindustryfacingthedevelopmentofthemainproblemsincludehumanresources,operatingcost,standardizationdifficultyisgreat,maligncompetition,industryshortageoffundsandpolicysupportandotherissues.Amongthem,humanresourcesaccountedforthehighestproportionofchoice,upto80%,followedbytheoperatingcosts,60%,standardizationdifficultybig,45%,formchaincateringindustrydevelopmentfacesthreechallenges.
