26、了最新的中文菜单英文译法讨论稿。 目前这个包含近3000种菜品、酒水的“标准”英文翻译正式挂上“首都之窗”、“北京市民讲外语官网”,再次邀请市民提建议。 新菜单考察星级饭店英译菜单 去年12月,名为北京市餐饮业菜单英文译法(讨论稿)的“中国菜翻译稿”在网上公示了10天,首稿共收录了2000多条译法。 经过去年的网上公示、征集市民建议以后,此次公布的中文菜单英文译法(讨论稿)又扩充了许多内容。据介绍,“新菜单”由北京市规范公共场所英语标识工作领导小组办公室和市旅游局从今年3月至5月联合对星级饭店、星级餐馆菜单英译开展核查后,由北京市外办、中国对外翻译出版公司组织专家审核、分类后统一编写。 新版菜
27、单综合网友意见 记者从北京市人民政府外事办公室了解到,首稿中的英文菜名译法主要来自各大饭店、酒店提供的菜单,再经过专家和专业机构论证以后形成。现在在网上公示的菜单,是征集了网友意见后,又参考了后海、CBD、望京等外国人工作、生活、休闲比较密集的地区的餐馆的常见菜名译法。 增加收录400多条菜名 记者看到,菜单中不仅包括“Poached Egg”(荷包蛋)这样的家常菜,也不乏“Braised Birds Nest with Deer Antler”(红烧鹿茸血燕)等“高档菜”。据介绍,“新菜单”比首稿添加了400多条译法,目前共收录2753条菜单及酒水的英文译法。共涉及中西餐、小吃、饮品等多个品
28、类、其中仅主食小吃一类就搜集到了400多个品种的译法,具有中国特色的豆腐类菜式也有近40种。和之前的首稿相比,原先的91个种类的中国酒现在细分成了黄酒、白酒、啤酒、葡萄酒,此外统一译法在数量上也扩充到了103个品种。 新译法“拼音译法” 另外记者发现,首稿中菜名在翻译手法上也有变化,比如“宫保鸡丁”在首稿上的翻译是:“Sauted Diced Chicken with Peanuts and Chili”,现在则采取了直接音译的模式:“Kung Pao Chicken”。 “味觉译法” 翻译手法既有类似“二锅头”“Er Guo Tou”这样的以汉语拼音模式直接翻译出的简单“拼音译法”,也有像“
