Byintroducingthecurrentsituationofmainstreambeverageandprocessingtechnologyofsolidbeverageathomeandabroad,theexistingproblemsinthedevelopmentprocessofdomesticsolidbeverageweresummarized,andthedevelopmentdirectionofsolidbeveragewasputforward.

1Preface

Solidbeverageisavarietyofrawmaterials(sugar,fruitjuice,vegetableextractoilandotheringredients)blending,concentratedanddried,orvariousrawmaterialcrushing,mixinggranular,flakeorpowder,waterChongdiaoonlyafterdrinkingthebeverage[1,2,3].

AccordingtoGB7101-2003,thesolidbeverageintoproteinsoliddrinkandordinarysolidbeverage:

proteinsoliddrinkreferstomilkanddairyproductsandotheranimalandplantproteinasthemainrawmaterial,addingornotaddingtheproteincontentofsupplementarymaterialisgreaterthanorequalto4%oftheproducts;theordinarysolidbeveragereferstothefruitjuiceorbyroastcoffee,tea,chrysanthemumandotherplantextractsasthemainrawmaterial,addingornotaddingotherauxiliarymaterials,thecontentofproteinislowerthan4%oftheproducts.

Accordingtothecharacteristicsofthesolidbeverage,theproducthasthefollowingadvantages:

(1)thewatercontentofsolidbeverageislessthan5%.Itisnotonlyeasytodeteriorate,shelflifeislong,butalsothevolumeisgreatlyreduced,soitiseasytocarryandtransport;

(2)inthesoliddrink,oftenaddalotofnutritioussubstances,ifthevegetablejuice,milk,vitamins,aminoacids,honeyandsoon,allofthesearenecessaryforthehumanbody,peoplecanobtainrichnutritionindrinkingbeveragesatthesametime,beofgreatadvantagetothebody.

Solidbeveragebecauseoftheaboveadvantagesandsimpleproductionprocess,productsalesincreasedsharplyeveryyear,themarketprospectisverybroad,[4,5].

2mainstreamvarietiesofsolidbeverage

Thehistoryofsolidbeverageisnotlong,butbecauseofitslongshelflife,easytransportation,nutritionanddelicious,ithasdevelopedrapidlyinyield,variety,packageandfunction.

2.1foreignmainstreamvarietiesofsoliddrinks

Inforeigncountries,theUnitedStates,WesternEurope,Japanandothercountries,solidbeverageproductionannualgrowthrateofmorethan10%,themainstreamvarieties,fruitpowder,milkcoffee,instantteaetc..Inthemaltedmilkthanthewell-knownbrandofBritain'sAHuafield,Australiabeautygreen;UnitedStatesCourtcaseOrangeJuicefruitpowderclass;InstantCoffeeinSwitzerlandandtheUnitedStatesNestleKraftcompanyproducedInstantCoffeeandinstantcocoa;instantteawiththeUnitedStatesandSwitzerlandNestleLipton,krafttheinstanttea,instantlemontea.

2.2solidbeveragemainstreamproductsinChina

InChina,theproductionofvariouskindsofsolidbeverageisalsoincreasingrapidly,anditsoutputhasaccountedformorethanhalfofalldrinks,andthesolidbeverageinthemajorcitiesofChinahasalsodevelopedveryfast.Atpresent,therearesolidbeverage,tea,milkpowder,soybeanmilkpowder,coffee,oatmealandsoon.Inaddition,withtheimprovementofpeople'slivingstandard,therearehigherrequirementsforthesolidbeveragetypeandnutrition,tomeetthemarketdemand,allkindsoffruit,cerealgrains,slimmingtea,milk,peanutpowder,SoybeanMilkcrystalcrystal,pumpkinpowderandothernewsolidbeveragehaveappearedonthemarket,itssalessituationisalsoverygood.

3statusofsolidbeverageprocessingtechnology

Richsolidbeveragevarieties,newtechnologyhasbeenappliedtosolidbeverageproduction,whichnotonlydevelopedatastemoreandmorevarietiesofproducts,applicationofnewtechnologywillalsoimprovetheproductqualityandproductionefficiencyofsolidbeverage.Atpresent,theproductionprocessofsolidbeverageisspraydrying,freezedryingandmicroencapsulation.

3.1spraydryingmethod

Spraydryingmethodisatraditionalmethodforpreparingsolidbeverage.Themethodistouseheatingairflowintothedryingchamber,throughhigh-speedrotatingatomizerorhigh-pressurenozzle,sothatthematerialisdispersedintoafinematerialfog,andthevortexofhotaircontacttomakepowderproducts.Thismethodhastheadvantagesofhighspeed,highefficiency,lessprocess,gooddrypowdersolubility,uniformproduct,highpurity,andcanmaintainthecolorandfragranceofthematerial.

3.1.

GuangdongProvinceAcademyofAgriculturalBiotechnologyResearchInstituteZhangYanetaltosorbitol,maltitolandlowenergyalcoholasthemaincarrier,theintroductionofbittergourd,andmadeintopulp,usingspraydryingprocessingofhealthbeverageofbalsampear.Thetechnologicalprocessisasfollows:

Theproducthaslowheat,andusesbetacyclodextrinasbitterembeddingagent,whicheffectivelyreducesthebitternessoftheproduct,andhascertainhealthcarefunction.ItprovidesanewwayfordeepprocessingofMomordicacharantia[6].

3.1.2newCordycepssinensishealthcaresolidbeverage

ZhangYanandLiuCuijiaoalsomadeCordycepssinensisasthemainrawmaterial,addednutrientfortifier,spraydriedtomakeCordycepshealthcaresolidbeverage.Theproductionprocessisasfollows:

ThesolidbeverageofCordycepssinensiswaspreparedbyspraydrying.Thecolorandaromaofthematerialwerekeptandthesolubilityoftheproductwasgood.Theproductandprocessreflectthedevelopmentofsolidbeverageinthedirectionofhealthcareandhealth[7].

3.2freezedryingmethod

Freezedryingisthefreezingofwaterwithalargeamountofwater,freezingitintoasolid,andthendirectlysublimationthewatervaporinthevacuum.Preparationofsolidbeveragewithfreezedrying,theutilitymodelhastheadvantagesof:

atlowtemperature,freezedrying,withoutdamagingheatsensitivesubstances,lossofvolatilecomponentsissmall,tomaintaintheoriginalstructure,caneliminatewater95%~99%andabove,thedriedproductcanbestoredforalongtimewithoutspoilage.

AndWuZhaoxiaofthefoodCollegeofShenyangAgriculturalUinversityhavemadeasolidbeveragebyvacuumfreezedryingwiththecompositevegetablepulpfermentedbylacticacid:

Theproducthasbrightcolorandrichnutrition,freeze-dryingcanmaximallyreducethedegreeofbreakingthenutrientsofrawmaterials,andprovidearelativelynewproductionprocessforthedevelopmentofsolidbeverage[8].

3.3microencapsulation

3.3.1solidbeveragewithmultispikeandmicrocapsule

LiaoXiaofeng,YuRongandothersfromEastChinaInstituteofGeologyhavemadeanewtypeofsoliddrinkbymicroencapsulation.Thetechnologicalprocessis:

Themicroencapsulationtechnologycaneffectivelypreventthelossanddamageofeffectivecomponentsintheplant.Notonlyhasagoodtaste,butalsohasShengjinzhike,antihypertensiveeffectofreducingweight[9].

3.3.2pumpkincornpowdereffervescenttabletsolidbeverage

Effervescenttabletisanewformofsolidbeverage.ThemarketsoldeffervescentsolidbeveragewithvitaminCeffervescenttabletsandeffervescenttabletsofGinkgobiloba.Inaddition,avarietyofflavorsandvarietiesofeffervescenttabletshavealsobeendeveloped.

LiCilioftheHarbinUniversityofCommerce,DuanShanhai,corn,pumpkinasrawmaterial,crushing,highalpha,microcapsuletechnology,withsugar,milkpowder,inordertoimproveitstasteandflavor,preparedsolidbeverageeffervescenttablets.Thetechnologicalprocessis:

4problemsinthedevelopmentofsolidbeverage

Althoughsolidbeveragehasdevelopedrapidlyinourcountry,itoccupiesaveryimportantpositionandproportioninthebeverageindustry,buttherearestillsomeproblemsinthecurrentdevelopmentofthesolidbeverageindustryinchina:

Firstofall,duetothetraditionaldietaryhabitsofourcountry,thepublicexceptforasmallnumberofsoliddrinkssuchasteaandmilkpowderidentification,itisdifficulttoreachconsensusformostofthenewform,specialfunctionofthesolidbeverage;

Secondly,mostofthesolidbeveragefactoriesaresmallandmedium-sizedenterprises,andtheirinfrastructureconstructionisrelativelyweak,thehygieneconditionsarenotsatisfactory,andthemanagementsystemisimperfect.Manysmallandmedium-sizedenterprisesrepeattheproductionoflow-endproducts,sothatsomeproductsonthemarketaretoomany,thecompetitionisextremelyfierce.

Again,thereareanumberoflowtechproductscurrentlyonthemarket,theyonlyhavetheshapeofsolidbeverage,anddoesnothavespecialfunction,hightechnologymaterialsandtechnologyappliedtotheproductsof[11].

Finally,themanagementofbeverageproductionoperationinourcountrytherearegaps,lackofasetofstrict,standardizedandcomprehensivemanagementsystem.Duetothesupportofthestateforbeverageenterprisesless,enterpriseshavetofightaloneinthefiercecompetition,oftenresultingininsufficientaccumulationoftheirown,capitalturnoverisnotsmoothandsoon.

Atthesametime,manyutilityenterprisesdonotproducelowqualityandlowpriceproductsaccordingtotheorderoffairmarketcompetitiontoattackthemarket,resultinginconfusioninthemarketprice.
