FoodHydrocolloidspublishesoriginalresearchinbasicandappliedaspectsoftheproperties,functionalityanduseofmacromoleculesinfoodsystems.Hydrocolloidsinthiscontextincludespolysaccharides,modifiedpolysaccharidesandproteinsactingalone,orinmixturewithotherfoodcomponents,asthickeningagents,gellingagentsorsurface-activeagents.Includedwithinthescopeofthejournalarestudiesofrealandmodelfoodcolloids—dispersions,emulsionsandfoams—andtheassociatedphysicochemicalstabilityphenomena—creaming,sedimentation,flocculationandcoalescence.

SubmissionforalltypesofmanuscriptstoJournalofFoodEngineeringproceedstotallyonline.ViatheElsevierEditorialSystem(EES)websiteforthisjournal,

Originalresearchpapersshouldreporttheresultsoforiginalresearch.Thematerialshouldnothavebeenpreviouslypublishedelsewhere,exceptinapreliminaryform.
Reviewpaperswillbeacceptedinareasoftopicalinterestandwillnormallyfocusonliteraturepublishedoverthepreviousfiveyears.
AShortCommunicationisaconcisebutcompletedescriptionofalimitedinvestigation,whichwillnotbeincludedinalaterpaper.ShortCommunicationsshouldbeascompletelydocumented,bothbyreferencetoliterature,anddescriptionoftheexperimentalproceduresemployed,asaregularpaper.Theyshouldnotoccupymorethan4printedpages(about8manuscriptpages,includingfigures,tablesandreferences).
PreparationofManuscripts
Manuscriptsshouldbetypewritten,doublespacedwithwidemarginsthroughout,i.e.alsoforabstracts,footnotesandreferences.Linesmustbenumberedconsecutivelythroughoutthemanuscript.Everypageofthemanuscript,includingthetitlepage,references,tables,etc.shouldbenumbered.However,inthetextnoreferenceshouldbemadetopagenumbers;ifnecessary,onemayrefertosections.Underlinewordsthatshouldbeinitalics,anddonotunderlineanyotherwords.Avoidexcessiveusageofitalicstoemphasizepartofthetext.

Theabstractshouldbeclear,descriptiveandnotlongerthan250words.Anabstractisoftenpresentedseparatefromthearticle,soitmustbeabletostandalone.
Tables
1.Authorsshouldtakenoticeofthelimitationssetbythesizeandlay-outofthejournal.Largetablesshouldbeavoided.Reversingcolumnsandrowswilloftenreducethedimensionsofatable.
2.Ifmanydataaretobepresented,anattemptshouldbemadetodividethemovertwoormoretables.
3.Tablesshouldbenumberedaccordingtotheirsequenceinthetext.Thetextshouldincludereferencestoalltables.
