1、尤其是各种基于工业工程理论的方法渐渐被普及被推广,科学合理地运用工业工程方法来改善工作现场的设施布局,能有效提高各个作业单位间的联系和工作效率,能最大限度的发挥工作现场各种要素的效用,提升各大现代企业的工作效率和经济收益。然而,随着高校食堂逐渐变得企业化,高校食堂的后勤部门也逐渐学会运用基于工业工程的各种相关知识理论和工业工程的措施去进行管理。减少拥挤,提高师生对食堂的满意度,并增强食堂的竞争力。本文正是以这个目的为基础而展开研究。首先,本文收集并整理了国内外有关研究食堂管理与改善和工业工程相关资料的基础上,去食堂进行调查研究。并且我发现食堂存在不少问题,包括食堂在高峰期排队拥挤,员工打饭与学
2、生买饭的动作繁杂,食堂内设施布局不合理,员工管理的规章制度不够完善,员工管理不科学,物料采购与存储方面不合理等问题。结合工业工程相关理论方法,决定运用排队论相关知识解决排队拥挤的问题,以此来减少师生吃饭的排队时间;运用改善ECRS四大基本原则和流程程序分析来改善员工打饭的动作和学生买饭的过程,提高员工的工作效率;运用设施规划与物流分析中的SLP方法来计算食堂内部各个作业单位间的物流关系和非物流关系,并且进行综合分析,然后根据分析结果画出各作业单位间的位置相关图;运用人力资源管理中的相关理论来解决员工管理制度不科学,培训机制不健全等问题,从而来提高高校食堂员工的工作素质;再次运用ECRS四大原则
3、对物料采购、存贮方面的流程进行优化。研究表明,在运用了工业工程相关知识理论和解决方法后,高校食堂在提高工作效率、人员管理和物料采购等方面得到了改善,不仅提高了工作人员的工作效率,提高了食堂内部各作业单位间的联系频率,还改善了员工的管理的规章制度,提高了员工的素质水平。这不仅有助于提高学校食堂在师生心中的满意度,也增强了高校食堂在同类企业中的竞争力,为学校提高了声誉。关键词:工业工程;高校食堂;排队论;SLP;ECRS四大原则Application of Industrial Engineering in a College CanteenAbstractNow, industrial engi
