摘要

中国菜名英译研究对中国饮食文化的传播和推广具有重要意义。

本文探讨了将中国菜名翻译成英文的策略和方法,旨在在最大限度地保留中国菜名的文化元素的前提下,以外国朋友愿意接受和容易理解的方式正确翻译中国菜名。

鉴于饮食地位的重要性、饮食术语的广度以及中国饮食在世界上的普及程度,笔者大胆提出了“饮食文化”的概念,以期促进“饮食文化”这一范畴的确立和对外汉语教学的深入研究。

汉语菜名的语言特点显著,充分反映了汉语的语用习惯。

对中国菜名的专门教学研究,可以为汉语教学,特别是词汇和短语教学提供参考。

ABSTRACT

ThestudyofEnglishtranslationofChinesedishnamesplaysanimportantroleinthedisseminationandpromotionofChinesefoodculture.ThispaperexploresthestrategiesandmethodsoftranslatingChinesedishnamesintoEnglish,aimingattranslatingChinesedishnamesproperlyinawaythatforeignfriendsarewillingtoacceptandeasilyunderstand,onthepremiseofretainingtheculturalelementsofChinesedishnamestothegreatestextent.Inviewoftheimportanceofdietarystatus,thebreadthofdietaryterminologyandthepopularityofChinesecateringintheworld,theauthorboldlyputsforwardtheconceptof"dietaryChinese"inthehopeofpromotingtheestablishmentofthecategoryof"dietaryChinese"anditsin-depthstudyofteachingChineseasaforeignlanguage.LanguagefeaturesofChinesedishnamesareremarkable,whichcanfullyreflectthepragmaticshabitsofChinese.SpecialteachingresearchonChinesedishnamescanbeusedforreferenceinChineseteaching,especiallyinvocabularyandphraseteaching.

Chapter1Introduction

FoodcultureisanimportantpartofChinesetraditionalculture.ChinesefoodnamesconcentratetheessenceofChinesetraditionalcultureandreflectthelightofthewisdomoftheChinesenation.

1.1Thebackgroundofthestudy

Chinaisanancientcivilizedcountrywithahistoryof5000years.Itscultureisextensive,profoundandhasalonghistory.Since1978,whenChinaimplementedthereformandopening-uppolicy,exchangesbetweenChinaandtheoutsideworldhavebecomemoreandmorefrequent.Whilelearningfromforeigncultures,Chinahasgraduallypromoteditsownculturetotheworld.In2001,ChinabecameamemberoftheWTOfamilyandhasincreasinglyfrequenteconomicandtradecontactswithothercountriesintheworld.InAugust2008,Chinasuccessfullyhostedthe29thOlympicGames.The2010WorldExpowillbeheldinShanghai,China.Sincethen,moreandmoreforeignfriendshaveturnedtheirattentiontoChina.

FoodcultureisanimportantpartofChinesetraditionalculture.ChinesefoodnamesconcentratetheessenceofChinesetraditionalcultureandreflectthelightofthewisdomoftheChinesenation.TodisseminateChinesecivilizationtotheworld,dietarycultureshouldoccupyanimportantposition;topromoteChinesefoodculturetotheinternationalcommunity,theEnglishtranslationofChinesefoodnamesshouldnotbeignored;toputforwardtheconceptof"dietaryChinese"inthefieldofChineseasaforeignlanguageandtoconductin-depthresearchonithasimportantpracticalsignificanceforimprovingthescopeofteachingChineseasaforeignlanguageandpromotingChinesedietaryculture;ItisnecessarytointerpretthenamesofChinesedishes,understandChinesecultureandcarryouttheteachingandresearchofChinesedishesnames.

TheEnglishtranslationandteachingofChinesedishnamesisacross-culturalcommunicationwork,whichshouldbetakenseriously.BecausetheEnglishtranslationofdishnamesisnotonlyatoolforlanguageexchangeinthecateringindustry,butalsoacarrierforspreadingChinesecateringcultureandlettingtheworldknowChina.ItisalsoabridgeandlinkfordeepeningfriendshipbetweenChineseandforeignpeople.However,therearemanyproblemsintheEnglishtranslationofChinesedishnames,whichneedtobestandardizedurgently.Asearlyas1990,Mr.LiuZengyustronglyrecommendedtheestablishmentofacommitteefortheEnglishtranslationofChinesedishesinanarticleentitled"TheEnglishtranslationofChinesedishesisinurgentneedofapproval".[2]TakingadvantageoftheopportunityoftheOlympicGames,BeijingintroducedtheEnglishTranslationofChineseMenu(hereinafterreferredtoasthe"TranslationLaw")tostandardizetheEnglishtranslationofdishnames,whichisausefulattempttoexploretheEnglishtranslationofChinesedishnames.

1.2TheSignificanceoftheStudy

Theinappropriatetranslationresultsinthelackofculture.ThemaindifferencebetweenChineseandEnglishdishnamesisthatEnglishdishnamesaremainlyrealistic.Generally,themainingredients,accessories,seasoningsandcookingmethodsusedindishesarelisteddirectly,intuitivelyandpractically.Chinesedishnamesaremorefreehand,whicharebothpracticalandartistic.Itnotonlycontainsprofoundhistoricalandculturalbackground,stronglocalcustomsandcustoms,butalsoreflectsthethinkingmodeandvaluesoftheHannationality."JadeabalonepreservedKirinchicken"isadelightfuldishname.Onthecontrary,itsEnglishtranslationBraisedChickenwithSlicedAbaloneandHamlosesitscolor.The"steamingchickenclawswithgoodluck"reflectspeople'sgoodwishes.IftranslatedintoSteamedChickenFeet,thegoodomenwilldisappearanditwillloseitsgrace.Inaddition,thenamesof"onetastingpot","frieddoublewinter","threecupsofchicken","fourtreasuresofstewedduck","fiveflavorsoftofu","eighttreasurespot"and"hundredflowersbrewingnorthernmushrooms"withnumericabbreviationsareverycommoninChinesemenus;"oldduckstewedwithCordycepsgrass","chickenstewedwithgastrodia"and"waistflowerslicesofEucommiaulmoides"arethemaincharacteristicsofChinesediet;"Jiaohuachicken","Bazhenpot"and"Baihuabrewingnorthernmushroom"are"HongmenBanquet"revealsthehistoricalflavor;"WestLakevinegarfish"and"Wuxispareribs"conveythelocalfeelings.

Chinesecuisineissimpleinformandrichinmeaning.Itpursuesbeautyinform,sound,meaningandrhyme.ItisnotjustafewEnglishwordsthatcancontrolit.WhentranslatingEnglishdishes,weshouldtryourbesttoretaintheirnationalculturalcharm,otherwise,itwillbeagreatfailureinEnglishtranslationofdishnames.

1.3TheStructureoftheThesis

Thefirstchapteristheintroduction,whichstatesthesignificanceofthestudyandteachingofEnglishtranslationofChinesedishnamesandbrieflyanalysesthepossibilitiesofputtingforward"Chinesediet";combinesthequestionnairesurveyofforeignstudents,explorestheexistingproblemsinthetranslationofChinesedishnamesandthedirectionofimprovement;reviewsthegeneralsituationofthestudyofEnglishtranslationofChinesedishnamesandsummarizestheexistingresearchresults.Therearetwomaintypesofopinionsonthetranslationofdishnames:

oneisfreetranslationaccordingtothehabitofEnglishdishnames,whichmainlyreflectsthematerial,cookingmethodsandtastecharacteristicsofdishes;theotheristomaintainthecharacteristicsandcultureofChinesedishnamesandadoptthetranslationmethodofliteraltranslationwithfreetranslationandannotation.

Inthesecondchapter,onthebasisofdiscussingthecharacteristicsofChinesefoodcultureandthedifferencesbetweenChineseandWesternfoodculture,theuniquestyleofChinesefoodnamingisdeeplyexplored.ThefamousChinesedishesareconcise,andpayattentiontotheuseoflanguageskills.Theyaremainlyembodiedinthreeaspects:

gooduseofrhetoric,skillfuluseofcollocationandcleveruseofimplicature.ThenamingofChinesedishesisinfluencedbyculturalfactorssuchaslanguage,material,region,societyandreligion.WeshouldpayattentiontothecomprehensiveconsiderationofEnglishtranslationofdishnamesfromthesefiveperspectives.

ChapterthreestudiestheEnglishtranslationmethodsofChinesedishnamesaccordingtothenamingcharacteristicsofChinesedishnames.ThispapercreativelyexploresstrategiesfortranslatingChinesedishnamesintoEnglishfromtheperspectivesofwordselection,substitution,additionandsubtraction,expansionandcontraction,andextensivelycomparesliteraltranslation,freetranslation,transliteration,annotationandconcurrenttranslationfromtheperspectiveoftheoryandpractice,inordertofindth
