Certainly,ourmouthsandtongueshavetastebuds,whicharereceptorsforthefivebasicflavors:
sweet,salty,sour,bitter,andumami,orwhatismorecommonlyreferredtoassavory.Butourtonguesareinaccurateinstrumentsasfarasflavorisconcerned.
Theyevolvedtorecognizeonlyafewbasictastesinordertoquicklyidentifytoxins,whichinnatureareoftenquitebitteroracidlysour.
Allthecomplexity,nuance,andpleasureofflavorcomefromthesenseofsmelloperatinginthebackofthenose.Itistherethatakindofalchemyoccurswhenwebreatheupandoutthepassingwhiffsofourchewedfood.Unlikeahound'sskullwithitsextralongnose,whichevolvedspecificallytodetectexternalsmells,ournoseshaveevolvedtodetectinternalscents.Primatesspecializeinsavoringthemanymillionsofflavorcombinationsthattheycancreatefortheirmouths.
