Pu-erhteaisauniquemicrobialfermentedteaproducedfromthesun-driedleavesoflarge-leafteaspecies(Camelliasinensis(Linn.)var.assamica(Masters)Kitamura)intheYunnanprovinceofChina.Pu-erhteahasbecomeincreasinglypopularinSoutheastAsiamaybeduetoitsmultiplehealthbenefits.ThespecialsensorycharacteristicsofPu-erhteaarisefromthemultitudinouschemicalchangesandtransformationsofthechemicalconstituentsofthesun-driedgreentealeavesthatoccurduringthepost-fermentationprocess.

Teaisoneofthemostpopularbeveragesconsumedintheworldanditsbiologicalactivitiesandhealthbenefitshavebeenwidelyexplored(Lin&Lin-Shiau,2006).ItisnormallyproducedfromtheleavesoftwovarietiesoftheplantCamelliasinensis:

var.sinensisandvar.assamica(Chen,Yu,&Tong,2000;Wang,Provan,&Helliwell,2000).Basedontheprocessingproceduresutilised,teacanbedividedintogreentea(non-fermented),oolongtea(semi-fermented),blacktea(fullyfermentedbyoxidizingenzyme)anddarktea(post-fermentedbymicrobe).Unlikegreentea,oolongteaorblacktea,darkteaisauniquemicrobialfermentedtea,anditsproductionisonlylimitedtotheareasofChinaandJapan(Jiangetal.,2011).InChina,darkteaistraditionallyfurtherdividedintoYunnanPu-erhtea,HunanFu-zhuantea,HubeiQing-zhuantea,SichuanBian-xiaoteaandGuangxiLiu-baoteaaccordingtothedifferentproducingareasandtheprocessingtechnologiesemployed.Amongtheseteas,Pu-erhteaisofspecialconcern,andisalsothemostrepresentativedarktea.
