UKscientistsattheInstituteforFoodResearchhaveidentifiedbloodpressure-loweringcompoundscalledkukoaminesinpotatoes.PreviouslyonlyfoundinLyciumchinense,anexoticherbalplantwhosebarkisusedtomakeaninfusioninChineseherbalmedicine,kukoamineswerefoundinpotatoesusinganewtypeofresearchcalledmetabolomics.

Untilnow,whenanalyzingaplant'

scomposition,scientistshadtoknowwhattheywereseekingandcouldtypicallylookfor30orsoknowncompounds.Now,metabolomictechniquesenableresearcherstofindtheunexpectedbyanalyzingthe100soreven1000sofsmallmoleculesproducedbyanorganism.
